Dal Pakwan

Dal Pakwan traditionally uses chana dal, which is split and husked Bengal gram (chickpeas), cooked until tender with spices like cumin, turmeric, and asafoetida. The dal is seasoned to be savory and slightly tangy, often with a final tempering of hot oil. Some variations incorporate a small amount of other lentils, but chana dal remains the standard choice.

The 'pakwan' is a crispy, flattened fried bread made from wheat flour dough that is rolled very thin and deep-fried until crunchy, similar to a large papadum or crisp puri. The contrast between the soft spiced dal and the crunchy pakwan is central to the dish. It is typically broken into pieces and used to scoop up the dal.

Dal Pakwan is a traditional Sindhi breakfast dish originating from the Sindh region, which is now part of Pakistan. Many Sindhi Hindu communities relocated to India following the Partition of 1947, bringing the dish with them. It remains especially popular in Sindhi neighborhoods in Indian cities like Mumbai, Ahmedabad, and Ulhasnagar.

Dal Pakwan is commonly accompanied by green coriander-mint chutney, sweet tamarind chutney, and chopped onions with fresh coriander as garnish. Some vendors also serve fried green chilies or a tangy imli topping. The combination of sweet, tangy, and savory accompaniments is essential to the authentic Sindhi experience.
