Singapore Hokkien Mee consists of thick yellow noodles and rice vermicelli stir-fried with prawns, squid, pork, and egg in a rich prawn-and-pork broth until the liquid is absorbed. It is typically served with sambal chili and a squeeze of lime.

Penang Hokkien Mee is a prawn-based noodle soup served in a spicy broth made from prawn shells and pork bones. Despite sharing the Hokkien name, it is a completely different dish from the stir-fried Singapore version.

Kuala Lumpur's version of Hokkien Mee consists of thick yellow noodles stir-fried in dark soy sauce with pork, squid, and cabbage, producing a characteristically dark, caramelized dish. All three regional variants—Singapore, Penang, and KL—share Hokkien immigrant roots but have evolved into distinct preparations.
