Malabar spinach (Basella alba)

Basella alba has a mild, slightly peppery flavor that is very similar to regular spinach, but its leaves are much fleshier and mucilaginous. This succulent texture makes it a popular thickening agent in Asian soups and stir-fries.

Unlike traditional spinach, which bolts quickly in the heat, Malabar spinach is highly heat-tolerant and thrives in tropical and subtropical climates. It is a fast-growing climbing vine that produces abundantly throughout the hot summer months.

The plant features thick, semi-succulent stems that can be green or reddish-purple, depending on the variety. It also produces small, dark purple fruits that are historically used as a natural red dye.

It is most commonly grown from seeds, which should be soaked overnight before planting to improve germination rates. Alternatively, the succulent stems can be easily rooted in water or damp soil via cuttings.
