Okazaki is a city in Aichi Prefecture on central Honshu, Japan, within the Chubu region. It is closely associated with Tokugawa Ieyasu, the founder of the Tokugawa shogunate, who was born at Okazaki Castle in 1543. The reconstructed castle and surrounding Okazaki Park preserve that connection, while the city is also known for traditional production of Hatcho miso, a dark soybean miso associated with the area.
