Tuber brumale

Tuber brumale is known as the winter truffle because it fruits from late autumn through winter. That seasonal timing helps distinguish it from some summer-fruiting European truffles.

It can resemble Tuber melanosporum, the prized Périgord black truffle, in appearance. Tuber brumale is generally regarded as milder and less valuable in culinary use.

Its aroma is usually described as weaker and less refined than that of Tuber melanosporum. Exact scent varies with maturity, soil, and storage, so smell alone should not be used for identification.

It is considered an edible European truffle, but it is not usually valued as highly as Tuber melanosporum. Correct identification matters because several dark underground fungi can look similar.
