Zefir

description Zefir Overview

Zefir is a soft confection widely associated with Russia and other parts of Eastern Europe, made by whipping fruit purée with sugar and egg white before stabilizing the foam with a gelling agent, commonly agar. It is usually piped into ridged halves that are joined and allowed to set. Apple purée is a common base because its pectin supports the texture, which is airy and tender but more structured than ordinary whipped fruit foam.
