Ainu cuisine refers to the traditional foodways of the Ainu people, whose historical homeland includes Hokkaido, Sakhalin, and the Kuril Islands. It is associated with salmon, trout, other freshwater and marine foods, game, wild plants, roots, berries, and grains such as millet, with rice becoming more important through later contact with Japanese society. Smoking, drying, boiling, and simple seasoning were used to preserve food and emphasize its original taste.
