Akamu, also known as ogi or pap, is a traditional West African fermented cereal porridge commonly made from white corn, sorghum, or millet. To prepare it, grains are soaked, wet-milled, and allowed to ferment for several days before the starch is separated and boiled into a smooth, thick paste. It possesses a slightly sour taste and is traditionally served hot as a breakfast staple alongside akara (bean cakes) or moi moi. Because of its soft texture and high digestibility, it is widely used as a primary weaning food for infants across Nigeria and surrounding regions.
