George Crum was an American chef associated with Saratoga Springs, New York, during the nineteenth century. A popular story credits him with creating the potato chip in 1853 at Moon's Lake House after a customer repeatedly rejected thick french fries, but the story's details and his sole responsibility are disputed by historians. Crum is therefore best understood as a figure in the early history and mythology of the potato chip.
