Misozuke is a traditional Japanese preservation technique in which foods such as vegetables, tofu, fish, or meat are pickled by being buried in fermented miso paste. The salt and enzymes present in the miso act as a preservative, significantly extending the shelf life of the food while drawing out moisture.
