Moulin de Sévery

It remains a working artisan oil mill rather than merely a preserved exhibit. The mill produces walnut, hazelnut, pistachio, rapeseed, and other oils using traditional pressing knowledge.

Written references to a mill at Sévery go back to 1228, while the present family enterprise became established there in the 19th century. The Bovey family has operated the mill across multiple generations since 1810.

Not for normal production. The mill stopped using power drawn from the Morges river in 1971 and shifted its working machinery to modern energy sources while preserving the historic craft.

Walnut oil is the mill's defining product and accounts for much of its production. Vaud walnut oil received Swiss AOP protected-origin status in 2020, connecting the product directly to regional ingredients and methods.
