How is semifreddo different from gelato?
Semifreddo is frozen in a mold and gets its soft, sliceable texture from whipped cream, whipped eggs, or both rather than from continuous churning. Gelato is churned as it freezes, producing a denser and more uniform frozen dessert.
Does traditional semifreddo contain raw eggs?
Many recipes use egg yolks or whipped egg whites, sometimes stabilized by beating them with hot sugar syrup or over heat. Anyone serving pregnant people, young children, or immunocompromised guests should use pasteurized eggs or a cooked preparation.
Why does semifreddo stay softer than ordinary ice cream?
Air incorporated into whipped cream or eggs, together with sugar, limits the formation of large ice crystals. The result remains semi-frozen and can usually be sliced shortly after removal from a household freezer.
How far ahead can semifreddo be prepared?
It is well suited to advance preparation because the filled mold needs several hours to freeze firmly. It can be kept covered in the freezer and unmolded shortly before serving with fruit, chocolate, nuts, or a sauce.
