description Tompouce Overview

A tompouce is a Dutch pastry composed of two rectangular layers of puff pastry with a thick filling of pastry cream between them. The upper layer is coated with smooth icing, conventionally pink, while orange icing is widely used for King's Day and other occasions associated with the Dutch royal family. Its firm layers and tall cream center make it characteristically difficult to eat neatly, and it is sold throughout the Netherlands.
