description Tonka Bean Overview

Tonka bean is the aromatic seed of the South American tree Dipteryx odorata. Its fragrance and flavor come partly from coumarin, a naturally occurring compound often described as sweet or vanilla-like, and the beans are used in some cuisines and perfumery. In the United States, the addition of coumarin to food has been prohibited since 1954, so tonka bean is not treated as an ordinary food ingredient there.
