Their intense aroma degrades rapidly after harvest, and the short autumn season drives wholesale market prices to thousands of dollars per pound.

Unlike black truffles, the white Alba truffle is traditionally served raw, as cooking destroys its highly volatile, delicate flavor profile. Chefs typically use a specialized truffle slicer to shave paper-thin slivers directly over warm, simple dishes like tagliolini pasta or risotto.

The official harvest season for Tuber magnatum typically runs from late September through late December. During the autumn months, specifically around the Alba International White Truffle Fair held in October and November, you can find the highest quality specimens available to consumers.
