What is the difference between turmeric and curcumin?

Turmeric is the dried rhizome of Curcuma longa, while curcumin is one of its naturally occurring pigments. Curcumin gives the spice much of its yellow-orange color, but whole turmeric contains many other compounds.

Why is black pepper often paired with turmeric?

Black pepper contains piperine, a compound associated with increased curcumin absorption. In cooking, the pairing also adds pungency to turmeric-heavy dishes such as curries, lentils, and golden milk.

Can fresh turmeric replace ground turmeric in a recipe?

Is turmeric the same spice as Indian saffron?
