Carbone Arrabbiata Sauce is a retail product developed to bring the flavor profile of chef Mario Carbone's Manhattan restaurant to home cooks. While it draws inspiration from the restaurant's spicy tomato sauce, the jarred version is formulated for mass production and shelf stability, so it is not identical to the freshly made restaurant version.

Mario Carbone is a chef who co-founded Major Food Group, the hospitality company behind the flagship Carbone restaurant in Greenwich Village, Manhattan. Major Food Group also operates other acclaimed New York restaurants including ZZ's Clam Bar and Sadelle's.

The "arrabbiata" style traditionally incorporates dried red chili peppers, and Carbone's retail version delivers a noticeable but moderate heat level. It is spicier than a standard marinara but not overwhelmingly hot for most palates, positioning it as a premium option alongside brands like Rao's.

Arrabbiata sauce is classically paired with penne in the Roman dish penne all'arrabbiata, as the tubular shape holds the spicy tomato sauce well. The sauce also works with rigatoni, bucatini, or spaghetti, and the Carbone brand recommends similar traditional Italian pairings.
