Egg Mappas

Egg Mappas is a specific traditional curry from the Syrian Christian community of Kerala, India, characterized by its rich coconut milk base. Unlike a standard North Indian egg curry, which often uses a tomato and onion gravy, Mappas relies heavily on coconut milk for its texture and mild, aromatic flavor. It also typically incorporates a souring agent like vinegar or kudampuli.

The distinct tang in Egg Mappas comes from the addition of a souring agent, which is a hallmark of Kerala cuisine. Traditionally, cooks use either vinegar or kudampuli, which is also known as Malabar tamarind or gambooge. This sourness perfectly balances the rich, creamy sweetness of the coconut milk base.

Because Egg Mappas features a flavorful, liquid-heavy gravy made of coconut milk, it pairs exceptionally well with flatbreads and rice. It is traditionally served alongside appam, which is a type of South Indian pancake with a lacy, crispy edge and a soft center. It also goes great with steamed Kerala red rice or idiyappam string hoppers.

In Egg Mappas, the eggs are typically hard-boiled first before being added to the simmering coconut milk gravy. Often, the boiled eggs are lightly pan-fried or scored with a knife so they can absorb the aromatic spices, like turmeric and ginger, from the sauce. This ensures every bite of the egg is infused with the curry's flavor.
