Korintje cinnamon comes from Cinnamomum burmannii, a tree native to Sumatra, Indonesia, and is the most widely traded cinnamon in the United States by volume. Also called Indonesian cinnamon or Padang cassia, it belongs to the cassia group of cinnamons rather than Ceylon cinnamon (Cinnamomum verum). Its bark is thicker than Ceylon cinnamon's, its flavor is milder and sweeter, and it contains higher levels of coumarin, a naturally occurring compound.
