Which agaves are used in Montelobos Ensamble?

The current Ensamble combines papalote, espadín, and tobalá, corresponding to Agave cupreata, angustifolia, and potatorum. It is not an espadín, tepeztate, and arroqueño blend.

Is Montelobos Ensamble made in Oaxaca?

The current official production information places it at Palenque del Tentzo in San Nicolás Huajuapan, Puebla. Maestro mezcalero Aarón Alva produces it under the direction of Iván Saldaña.

How is Montelobos Ensamble cooked and distilled?

The agaves are cooked in a conical underground brick pit with encino and tepeguaje wood. After wild fermentation in open pine vats, the spirit is distilled in copper stills heated by firewood.

What flavors should I expect from Montelobos Ensamble?

Montelobos describes aromas of cooked agave, smoke, and citrus, followed by notes resembling capers, nutmeg, and pink pepper. It is bottled at 43.2% alcohol by volume.
