What is the difference between muhallebi and rice pudding?

Muhallebi is usually a smooth milk pudding thickened with rice flour or cornstarch, rather than a pudding containing intact rice grains. Turkish sütlaç and Egyptian roz bel laban are closer to conventional rice pudding.

Should muhallebi be flavored with rose water or orange blossom water?

Both are traditional, particularly in Levantine and Egyptian versions of the dessert. Turkish muhallebi is also served plain or with cinnamon, so floral flavoring is not mandatory.

Why did my muhallebi turn lumpy?
