Tuba is a traditional alcoholic beverage created by fermenting the freshly collected sap of various palm trees, most notably the coconut palm. The drink holds deep cultural roots in the Philippines, where the sap is tapped from flower cuttings and naturally fermented. It is also notably present in coastal regions of Mexico, having been introduced via the Manila Galleon trade, where it is consumed as a sweet, mildly alcoholic refreshment before it fully sours and transitions into palm vinegar.
