What is the difference between turmeric and curcumin?

Turmeric is the dried rhizome of Curcuma longa, while curcumin is one of its naturally occurring pigments. Curcumin gives the spice much of its yellow-orange color, but whole turmeric contains many other compounds.

Why is black pepper often paired with turmeric?

Black pepper contains piperine, a compound associated with increased curcumin absorption. In cooking, the pairing also adds pungency to turmeric-heavy dishes such as curries, lentils, and golden milk.

Can fresh turmeric replace ground turmeric in a recipe?

Yes, but fresh rhizome tastes brighter and less concentrated than the dried powder. It can be grated like ginger, although it readily stains hands, cutting boards, and pale fabrics.

Is turmeric the same spice as Indian saffron?

No. Turmeric comes from Curcuma longa, whereas true saffron consists of stigmas from Crocus sativus and has a very different flavor and price.
