Each bottling is labeled with the specific agave variety or blend used and the state of origin. Derrumbes works with mezcaleros across multiple Mexican states including Oaxaca, Michoacán, San Luis Potosí, and Durango, among others. Each state contributes distinct production methods, agave varieties, and flavor profiles. The brand specifically aims to highlight that mezcal is a broader Mexican tradition, not exclusively an Oaxacan one.

Derrumbes mezcal carries certification from the COMERCAM regulatory body (now known as the Mexican Regulatory Council of Mezcal), which verifies that the spirit meets legal standards for production methods, agave species, and geographic origin. Each bottle displays the certification information including the mezcalero's name and palenque location.

Derrumbes mezcal is best served neat at room temperature in small sips from a copita or jicara to appreciate the full range of agave flavors and aromas. Chilling or mixing premium single-village mezcals is generally discouraged by enthusiasts. Small sips allow the palate to detect the subtle differences between agave species and production regions.
