description Brunost Overview

Brunost, meaning brown cheese, is a group of Norwegian whey cheeses recognized by their distinct caramel color and sweet, fudge-like flavor. Unlike most cheeses, it is made by boiling a mixture of whey, milk, and cream until the natural milk sugars caramelize, which also gives it a firm, sliceable texture. The resulting cheese contains up to 50 percent sugar by weight and is traditionally consumed in thin slices on bread, waffles, or alongside coffee. Varieties include Gudbrandsdalsost, which uses a blend of cow and goat milk.
