Funazushi is a traditional Japanese dish from Shiga Prefecture and is considered the oldest surviving form of narezushi. It is prepared using nigorobuna, a type of carp native to Lake Biwa, which is gutted, packed with salt, and later fermented with steamed rice for up to several years. This extended lacto-fermentation process preserves the fish and results in a highly pungent aroma alongside a sharp, acidic flavor profile. The finished product is typically sliced very thinly and consumed in small quantities as an accompaniment to sake or tea.
