help Chole bhature FAQ

What is the difference between chole and the chickpeas served with bhature?

Chole is the spiced chickpea curry, usually made with white chickpeas, onions, tomatoes, and a warming masala. Bhature is the separate deep-fried, leavened bread served beside it.

Why does restaurant-style chole sometimes look dark?

Some cooks use strong tea, tea bags, dried amla, or dark-roasted spices to deepen the chickpeas' color. These ingredients can also add tannic or sour notes without changing the dish into a different curry.

How is bhature different from puri?

Bhature is generally larger and made from a leavened wheat dough that may include yogurt or another fermenting ingredient. Puri is smaller, unleavened, and commonly made from whole-wheat atta.

Is chole bhature the same as Amritsari kulcha with chole?

No, the chickpea accompaniment may be similar, but the breads are made differently. Bhature is deep-fried, while Amritsari kulcha is stuffed or seasoned and traditionally baked in a tandoor.
