Derrumbes Michoacan

Derrumbes Michoacán is made primarily from wild-harvested Agave cupreata, also known locally as Papalote. This specific agave varietal is native to the mountainous regions of Guerrero and Michoacán. It gives the mezcal a distinct, herbaceous flavor profile with notes of citrus and earth.

This mezcal is a single-village bottle produced in the municipality of Puruándiro, located in the state of Michoacán, Mexico. Derrumbes is a brand dedicated to showcasing the distinct regional styles of Mexican agave spirits. Mezcal from Michoacán is highly regarded for its unique terroir and traditional production methods.

In keeping with traditional mezcal practices, the agave hearts are roasted in traditional underground ovens lined with volcanic rock and wood. This subterranean pit roasting process is what gives mezcal its signature smoky flavor. After roasting for several days, the agave is then crushed, usually by a tahona stone.

Because it is made from Agave cupreata and distilled in a specific region, it features complex notes of green peppers, herbs, and a subtle earthy sweetness. It is notably less aggressively smoky than mezcals from Oaxaca, allowing the vegetal flavors of the agave to shine through. The finish is often described as clean and slightly spicy.
