Kilchoman 100% Islay

Kilchoman 100% Islay is a single malt where every single step of the process—from growing and malting the barley to distilling and bottling—takes place entirely on the Isle of Islay. This is highly unusual, as most distilleries source their malted barley from large commercial maltings on the Scottish mainland.

This expression offers a lighter, yet intensely smoky and maritime character developed through first-fill ex-bourbon barrels. You can expect notes of peat smoke, lemon zest, soft vanilla, and a distinct, clean coastal salinity.

The 100% Islay whisky is floor-malted by hand at the distillery and is lightly peated compared to Kilchoman's core range, usually around the 20 PPM mark. This lower peat level allows the delicate, sweet vanilla notes from the ex-bourbon barrels to shine alongside the maritime smoke.

Kilchoman was founded in 2005 and is known as the first distillery to be built on the Isle of Islay in over 124 years. It operates as a farm distillery, meaning it integrates the agricultural process of growing barley directly into its whisky production.
