description Tulumba Overview

Tulumba is a fried, syrup-soaked pastry found in Turkish cuisine and in several cuisines of the Balkans, the eastern Mediterranean, and the Middle East. A soft, unleavened dough is piped through a ridged nozzle into hot oil, producing short fluted pieces that are fried until crisp and then immersed in sweet syrup. Unlike filled pastries, tulumba derives its contrasting texture from its browned exterior and syrup-saturated interior and is commonly served as a small dessert.
