The Australian Blood Lime is a citrus hybrid developed by the Commonwealth Scientific and Industrial Research Organisation (CSIRO) from a cross between the red finger lime and the Ellendale mandarin. It is distinguished by its striking, dark red-maroon skin and its intensely red, pearl-like juice vesicles that closely resemble caviar. The fruit offers an intensely tart and aromatic flavor, making it highly valued by chefs for use in garnishes, sauces, and premium beverages.
