Dunsyre Blue is a Scottish farmhouse blue cheese made by Humphrey Errington at his farm in the Scottish Borders. It is produced from unpasteurized Ayrshire cow's milk and develops blue veining during maturation. The cheese is associated with traditional small-scale farmhouse production and takes its name from Dunsyre, a village in South Lanarkshire.
