An Empire biscuit is a sandwich biscuit commonly found in Scottish bakeries and elsewhere in the United Kingdom. It consists of two round shortbread-style biscuits joined with raspberry or another fruit jam, then topped with white icing. A glacé cherry or small piece of candied cherry is often placed in the center, giving the biscuit its characteristic finished appearance.
