Mastering Pasta

Mastering Pasta was written by Marc Vetri, the Philadelphia-based chef and restaurateur behind Vetri Cucina, which opened in 1998. The book is co-authored with David Joachim, a prolific cookbook collaborator.

The book provides detailed, technical instructions for making pasta doughs and shapes from scratch, covering everything from basic egg pasta to extruded shapes and filled pastas. Vetri explains the science behind flour selection, hydration ratios, and kneading techniques with step-by-step photographs.

The book is written for serious home cooks as well as professionals, with recipes that range from simple hand-rolled pasta to complex filled and extruded shapes. While the techniques can be advanced, Vetri breaks down the process so that dedicated home cooks can follow along with practice.

Marc Vetri is best known for Vetri Cucina in Philadelphia, one of the most acclaimed Italian restaurants in the United States. He also founded a group of restaurants including Osteria, Amis, and Alla Spina before selling most of his restaurant group to Urban Outfitters in 2015.

Mastering Pasta was published in 2015 by Ten Speed Press. It followed Vetri's earlier cookbooks "Il Viaggio di Vetri" and "Rustic Italian Food," and is considered a definitive technical guide for pasta making.
