Rubing is a traditional fresh cheese from Yunnan Province in southwestern China. It is made from goat's milk and has a firm, pale body that can be sliced or cooked, distinguishing it from many softer fresh cheeses. Rubing is associated with local food traditions in Yunnan and is one of the better-known indigenous Chinese cheeses, although cheese production remains less central to Chinese cuisine than in Europe.
