Appleby's Cheshire is a traditional farmhouse Cheshire cheese made from unpasteurized cow's milk at Hawkstone Abbey Farm near Whitchurch, Shropshire, England. The Appleby family has produced the cheese since 1952, when Lance and Lucy Appleby began working with cheesemaker Joseph Gornall to revive genuine clothbound Cheshire. It is bound in lard-coated cotton cloth and aged for approximately six to nine weeks, producing a firm, crumbly texture with a tangy, savory flavor. It remains one of the few raw-milk, clothbound examples of a cheese that historically ranked among England's most widely produced varieties.
