Dovedale Blue, officially registered as Dovedale Cheese, is a British blue-veined full-fat soft cheese protected by a Protected Designation of Origin. It is made at Hartington in Derbyshire from whole milk drawn from farms in the Peak District and nearby counties, and it normally leaves the creamery after three to four weeks of maturation. The cheese has a creamy white appearance, smooth open texture and distinctive blueing; its production includes piercing and dipping the cheese in brine during maturation.
