Kefalotyri is a traditional hard cheese associated with Greece and Cyprus. It is commonly made from sheep’s milk, goat’s milk, or a mixture of the two, and has a firm texture with a salty, sharp flavor that suits grating. Because it holds its shape when heated, kefalotyri is also widely used for saganaki, the pan-fried Greek cheese preparation, in home and restaurant cooking.
